I really wouldn’t go down that road yet with your new unit. These aftermarket controllers exist because the older controllers in Tragers/PitBoss etc… were crap. The new controllers are far better.
Yeah. Make sure the bark is set well or the spritz/mop will make a mess if it. I personally do a mix of juice and vinegar and throw some rub in it too but I mop. The rub could clog a sprayer. Once the bark is set spritz when they start looking dry which is usually about 45 min like you mentioned.
Don’t bother with a probe in the ribs, flex test works for me. Do put a probe in your loaf though. I would hit your ribs with a bit more rub personally. Good luck! I’m doing some tomorrow 😉
Pre-seasoned means it’s ready to go, no seasoning necessary (in theory). Figure just cook up some bacon and it will be completely good 😉.
Is this designed to go on a pellet smoker or charcoal/gas grill?
Our pizza oven gets pretty dang hot. We do a thinner New Haven style -quasi-neopolatin - and it turns out really well - but expect some char on thin edges. Nice thing with thinner smaller pies is they cook so fast you can make a couple w/different goodies
