Precut bags seem to work much better. I buy the food saver bags. Amazon has a couple quart options, one seems more expensive, but if you read the reviews the cheaper ones fail way more…made in a different foreign location I forget where.

when I started smoking I was under the impression 225 was the standard cook temp. Not so At all. 225 just takes forever to cook everything and there’s no magic there.
you may want to try run briskets and butts at 275. Shaves a lotta time off and you cant...

Many thanks! Very helpful! our extra refer where it sitting runs between 36-37. Vac bag is tight, no Compromise there. Should get is smoked in a few days As we are out of smoked brisket and that needs fixin ASAP.
